Stir fried chicken and cashew nuts!

The key to making this an exceptionally tasty dish is finding the right ingredients and This song will surely put you in good spirits and help take your stir fry to another level!of course, the freshest.  Try, if possible to buy the veg and meat from a farmers market and the Asian ingredients from an Asian supermarket. Ok, well that was kind of obvious I suppose. Oh, and a wok is also useful but not essential. Just enjoy cooking and eating this stir fry!

  • 400g Chicken breast
  • 1 Carrot
  • Oyster mushrooms
  • 2 Spring onions
  • 1 Onion
  • 2 Dried chilies
  • 2 gloves of garlic
  • 100g Cashew nuts
  • Flour to coat the chicken
  • Oyster sauce
  • Soy sauce
  • Palm oil



First off cut the chicken into cubes and coat in the flour.

Next, chop up all your veg before cooking. Cut how you like, its a free world! Turn on the gas, if you have a gas stove that is, and heat up a tablespoon of the palm oil in the wok. Throw in the cashew nuts and stir continuously so they don’t burn. When the nuts have a nice color, remove. Now fry the chopped chillies for a minute and remove.

Add some more oil if needed and fry the chicken and once nicely browned all over, take out of the pan. Add some more oil and tip in all the veg and stir fry for a couple of minutes. Then throw in the nuts, chilies and chicken. Flavor with the oyster and soy sauce. I reckon about a couple of tablespoons of each should do nicely. Serve with some steamed rice and a Singha beer. Simple, quick and tasty!
