Chocolate and passionfruit ganache!

OK, I know the song is a little cheesy but the ganache oozes passion and chocolaty sexiness, so it was the perfect match! It’s also a great dessert to impress your new lady friend or make up with your partner! All I know is how tasty this dessert is and how fun it is to make. Enjoy!

 

Feeds 6 – 8 people

Ingredients

  • 250 ml Single cream
  • 250 ml Passion fruit juice or the juice and pulp from 3 passion fruits
  • 1 packet Gelatin
  • 6 tbsp’s cold water
  • 250 grams dark chocolate
  • 150 grams plain biscuits
  • 75 grams butter
  • 1 tbsp caster sugar

Recipe

Start off with the biscuit base. Wack the biscuits in a bag or if you have a food processor put them it that. Crush them up, until they’re a fine biscuit powder. Melt the butter in a pan, add the sugar and then the crushed up biscuits. Combine the butter with biscuits well to make a sticky mixture. Remove the biscuits to a cake tin and flatten with the back of a spoon.

Heat up the cream with the passion fruit juice to help the flavors infuse. Meanwhile, mix your gelatin with the cold water. Leave it for 5 mins or so and afterwards add it to the passion fruit and cream mixture. Leave it to cool!

Whilst that’s all going on, place a heatproof bowl over a pan of simmering water. Chop up your chocolate and add it to the bowl. Once the chocolate has melted completely stir in the passion fruit and cream mixture. Make sure it’s well combined. It should now be a light milk chocolaty color. Spoon a thin layer onto your biscuit base and set in the fridge for 30 mins. This helps the mixture not simply to leak through the biscuit base. After chilling it out, pour over the remaining mixture in the middle and let it spread out evenly. Return to the fridge for a good few hours or until the chocolate has set. Serve with some whipped cream or your favorite ice cream.
