Cheesy potato and smoked sausage croquettes with garlic mayo

Love this up beat song. Its catchy and puts me in a good mood, just like when you bite into these tasty little bad boys! Crispy on the outside, soft and cheesy in the middle! Dipped into the garlic mayo it’s the perfect snack!



Garlic Mayonnaise – Makes 150 ml

  • 1 large egg yolk
  • ½ tsp mustard
  • Pinch of sugar
  • 150ml sunflower oil
  • 1 tbsp. vinegar

Cheesy potato and smoked sausage croquette

  • 200 grams mashed potato
  • 25ml milk
  • 25 grams butter
  • 50 grams strong cheese
  • 25 grams smoked sausage
  • 1 egg
  • Breadcrumbs




Separate the egg yolk and mix it in a bowl till it thickens. Add the mustard, sugar and seasoning. Pour in the oil a little at a time, whisking continuously to help it all bind together. If you pour the oil in too quickly it could split, so be careful at this stage! As the mayo thickens and becomes shiny, you can add the oil in a steady stream. Blend in the vinegar, add the finely chop some garlic…simple! If you want a lemon mayo, get rid of the vinegar and add the juice and rind of a lemon instead. You can also use this mayo to make tartar sauce or an herby mayo, it’s up to you, be creative!

I had some extra mash from the night before, but I’m sure you know how to cook and mash some potatoes so I won’t go into the details of that! First off melt some butter in a pan. Once it’s melted pour in the milk and heat it up. Add your mash, tip in the cheese and the diced sausage, easy! Stir till the cheese has melted and then leave it to chill out, whilst you rock out! Whilst jamming, pull the ingredients for coating the little croquettes together. Whisk your egg in a bowl and put the breadcrumbs with herbs and seasoning in a separate bowl. Now the messy part! On a floured surface roll your cooled potato mix into long sausages; make sure to coat it all in flour. If the mixture is a bit wet add some more flour to get it to hold together better. Cut your potato sausage into bite size pieces. Coat first in the egg, and then in the breadcrumbs. Heat up a frying pan, and fry the tasty little croquettes until golden brown all over. Don’t crowd the pan, or the croquettes won’t be able to brown up evenly. Salt them if you want, or just dive in and dip them in your creamy garlic mayo!
